End of Summer Corn Salad

Over the weekend my dad cooked an incredible steak dinner with a fresh tossed salad and grilled corn on the cob. We ended up having way too much corn left over and I didn't want it to go to waste. I started searching online for some corn salad recipes. I found a few great ones, but none of them really spoke to me. So I created my own version. I didn't know exactly how it would turn out, but I was very pleasantly surprised with the outcome.


This summer corn salad is so good on it's own and as a side dish. I also think it would be so delicious on top of chicken or steak with sour cream. Think Chipotle burrito bowl. Here is what you will need to create this dish.

Ingredients:
  • 6 corn on the cob or one bag of frozen corn
  • 1 red pepper diced
  • 1 orange pepper diced
  • 1/2 red onion diced
  • Handful of cherry tomatoes cut in halves or quarters
  • 1 can of garbanzo beans
  • 3 Tablespoons of Italian dressing
Just chop and mix all the ingredients together. This should take about 20 minutes to prepare and feed about 6 to 8 people.
