Mary's Kitchen: Fresh Peach Crumble
The end of peach season is rapidly approaching and I am not ready! Is it just me, or were the peaches especially delicious this year? I grabbed at least 2 pounds of local peaches each time I went to the grocery store. Very time the peaches were enormous and so juicy! Some of the time I sliced them up and ate them in their purest form, but most of the time I whipped up an easy and amazing recipe. Fresh Peach Crumble takes about 15 minutes to prepare and 45 minutes in the oven. It was the dessert of choice this summer.
Fresh Peach Crumble
Ingredients
For the Peaches:
- 6 large peaches, sliced (about 2 1/2 lb.)
- 1/4 c. granulated sugar
- Juice of 1/2 lemon
- 1/2 tsp. ground cinnamon
- 1/2 tsp. ground ginger
- Pinch of kosher salt
For the Topping:
- 1 1/2 c. all-purpose flour
- 1 c. packed brown sugar
- 1/2 tsp. kosher salt
- 1/4 tsp. ground cinnamon
- 1/2 c. (1 stick) melted butter
- Vanilla ice cream, for serving
Directions:
- Preheat oven to 375°. Prepare the peaches: In a large bowl, combine peaches, sugar, lemon juice, cinnamon, ginger, and salt.
- Prepare the topping: In a medium bowl, combine flour, brown sugar, salt, and cinnamon. Pour in melted butter and stir until mixture resembles coarse crumbs.
- Pour peaches and juices into a large baking dish. Sprinkle crumb topping evenly over peaches.
- Bake for 45 to 50 minutes until topping is golden and peaches are bubbling.
- Serve warm with ice cream.
