Mary's Kitchen: Chocolate Chip Banana Muffins


I can't stop, won't stop... making banana recipes! Once again, I had some bananas that were just a bit too ripe to eat. I wanted to make another dessert, but this time I already knew what I wanted to create. Muffins! I rarely bake muffins or cupcakes, I am really more of a cookie girl. But for some reason, chocolate chip banana muffins just sounded right.




This recipe was so easy and so good! I whipped this up in less than a half-hour one morning before I logged in to work. I used a cupcake pan and ended up with 18 smaller muffins. They taste the best fresh out of the oven, of course. For the muffins, you don't devour, store them in an airtight container for up to five days. I added a teaspoon of cinnamon to add a little sweetness and because cinnamon and banana just taste so good together.
