Mary's Kitchen 2023: Garden to Table Butternut Squash

When B and I planted out garden in late May, we thought we were growing peppers, lettuce, and yellow squash. We were quite surprised when the yellow squash turned out to be butternut squash. I can now say I successfully grew, harvested, and cooked a meal with butternut squash. 


When looking for a fall recipe that included butternut squash, I found this Creamy Roasted Garlic Butternut Squash Pasta recipe. 


I will admit this recipe was labor intensive, especially for a Monday after a long day of work. However, the hard work paid off when it came to flavor. From start to finish, the kitchen smelled amazing. I might need to find a sage butter candle. A new favorite scent has been unlocked. 


For my first time working with butternut squash, I was pretty impressed with myself. This recipe really highlighted the flavors of the squash. The dish was sweet, savory, and utterly delicious. If you are looking for a great fall recipe and love pasta, this is a must-try.

*I did make one small change. Instead of gouda, I used mozzarella.
