Mary's Kitchen: Sweet Banana Bread

I love to bake all year round, but there is something special about baking a sweet loaf of banana bread on a crisp fall day. This is the perfect afternoon snack. I love eating this treat when it is fresh out of the oven. This banana bread is perfect on its own, or add a swipe of honey butter and a cup of tea for a cozy moment.






Ingredients:

  • 1/2 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1 stick of butter, unsalted
  • 2 large eggs
  • 3 ripe bananas
  • 1 tablespoon of milk
  • 2 teaspoon of cinnamon
  • 1 teaspoon of vanilla extract
  • 2 cups of AP flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon salt, coarsely ground

Instructions:

  1. Preheat oven to 325 degrees. Butter a 9x5x3 in loaf pan.
  2. Cream sugars and butter in large mixing bowl. Add eggs one at a time. Mixture should be light and fluffy.
  3. Mash 3 bananas in small bowl. I find a fork works best. Mix milk, cinnamon & vanilla with mashed bananas. In a separate bowl, mix flour, baking powder, baking soda, and salt.
  4. Add banana mixture to dry ingredients and stir until combined.
  5. Pour batter into buttered pan. Bake for 50 minutes to an hour, Check if done with a toothpick, if it comes out clean it is done. Let cool for 15 minutes.
  6. Enjoy as is or with honey butter.


This recipe takes a little over an hour to make including the bake time. To keep is fresr for a few days, wrap it in tin foil to retain the moisture. My recipe (below) was inspired by a recipe from Food Network.
