Mary's Kitchen: Sweet Banana Bread
I love to bake all year round, but there is something special about baking a sweet loaf of banana bread on a crisp fall day. This is the perfect afternoon snack. I love eating this treat when it is fresh out of the oven. This banana bread is perfect on its own, or add a swipe of honey butter and a cup of tea for a cozy moment.

This recipe takes a little over an hour to make including the bake time. To keep is fresr for a few days, wrap it in tin foil to retain the moisture. My recipe (below) was inspired by a recipe from Food Network.

Ingredients:
- 1/2 cup of granulated sugar
- 1/2 cup of brown sugar
- 1 stick of butter, unsalted
- 2 large eggs
- 3 ripe bananas
- 1 tablespoon of milk
- 2 teaspoon of cinnamon
- 1 teaspoon of vanilla extract
- 2 cups of AP flour
- 1 teaspoon of baking powder
- 1 teaspoon of baking soda
- 1 teaspoon salt, coarsely ground
Instructions:
- Preheat oven to 325 degrees. Butter a 9x5x3 in loaf pan.
- Cream sugars and butter in large mixing bowl. Add eggs one at a time. Mixture should be light and fluffy.
- Mash 3 bananas in small bowl. I find a fork works best. Mix milk, cinnamon & vanilla with mashed bananas. In a separate bowl, mix flour, baking powder, baking soda, and salt.
- Add banana mixture to dry ingredients and stir until combined.
- Pour batter into buttered pan. Bake for 50 minutes to an hour, Check if done with a toothpick, if it comes out clean it is done. Let cool for 15 minutes.
- Enjoy as is or with honey butter.
