Mary's Kitchen: Pumpkin Muffins
Happy Monday! I had a lovely weekend walking around the farmers market, thrifting, reading, and baking. It was my favorite kind of weekend. The kind where I go to bed on Sunday night feeling perfectly fine and wake up with a smile to face Monday.
I was feeling very productive in the kitchen on Sunday. Since it was Football Sunday, I was feeling snacky. I made air-fried zucchini sticks (recipe coming soon!) from a giant zucchini I picked up at the farmers market for 50 cents! I also roasted spaghetti squash to eat this week, another farmers market purchase.
The final item I made yesterday was fluffy and flavorful pumpkin muffins. I scoured the internet for a simple recipe that did not require butter since I was running low. I found this recipe from Preppy Kitchen and fired up the KitchenAid Mixer.
In under an hour, I had warm and luscious muffins. They are not too sweet, but chocolate chips or a cream cheese frosting would be the perfect addition if you wanted to add some sweetness. I ate two right out of the oven and am currently polishing one off for a mid-morning snack. I highly recommend these if you like a subtlety sweet pumpkin treat.
