Mary' Kitchen: Farmers' Market Meals
Produce from a farmers' market is top tier. During my last trip to the market, I loaded up on so many veggies. I thought it would be fun to share what I bought and what I made with everything.

The last time I went to the farmers' market I bought:
- 2 zucchini
- 1 eggplant
- 1 spaghetti squash
- 1 green pepper
- 1 white onion
- 1 quart of peaches
Here is everything I made:
Zucchini Sticks. I made these twice this summer and both times these were gone in minutes! The crunchy breading is go good and the zucchini just melts in your mouth. I made a quick dipping sauce by mixing bleu cheese and hot sauce. These were the perfect finger food for the football game.
Fried Eggplant. I was inspired by this recipe but added my own little spin. I think the key is to cut the skin off the eggplant. I would have made eggplant parm, but I did not have any mozz. Next time for sure!
Spaghetti Squash. I don't do anything too crazy with spaghetti squash. I keep it simple with this easy recipe: Drizzle squash in olive oil, salt & pepper. Bake at 400 for 30 minutes. I like to eat this as a side dish with chicken and veggies.
The pepper and onion were used in a slapdash chicken teriyaki dinner. That meal has become something we make almost weekly. It's easy to throw together and it hits the spot every time.
Peach Crumble. A tried and true recipe. This time I added some oats for some more texture and crunch. I made this on Saturday and it was all gone by Sunday afternoon.
I will admit I also bought a quart of green beans, which went bad. I don't think I stored them properly. That was a bummer, but overall I think I did a great job of not wasting what I bought. I got to try some fun recipes and they all tasted very good. Do you have a favorite farmers' market meal?
