Mary's Kitchen 2023: Pumpkin Spice Overnight Oats
TikTok has been killing it with the recipes! I was doom-scrolling a few days ago when feeling under the weather, but it turned into a very productive meal-planning session. One of the recipes I found and immediately wanted to try was Pumpin Spice Overnight Oats.
I've made my fair share of overnight oats when I can remember to do it the night before. It's a great grab-and-go breakfast for work or to have as a little afternoon snack. For my first time whipping these up, I was very happy with the results.
Pumpkin Spice Overnight Oats:
- Half a cup of oats
- Half a cup of milk
- Splash of creamer pumpkin spice
- Dash of cinnamon
- Two teaspoons of pumpkin purée
- One teaspoon of brown sugar
- One teaspoon of chia seeds
- Top with banana and Cinnamon or Pumpkin Spice
Mix milk, oats, creamer, cinnamon, pumpkin puree, brown sugar, and chia seeds into a mason jar and let sit overnight. This is a creamy version, but if you prefer a thicker recipe, add a few more oats. When ready to eat, top with half of a banana, cinnamon, or pumpkin spice. For a sweet treat, add whipped cream.
I also think apple would taste great and maybe even a drizzle of caramel if you are feeling crazy. I hope you enjoy!
